Amerikansk inspirerede pandekager kan sagtens laves af fuldkornsmel. Og toppet med en syrlig gedeost, lidt god skinke, brombær og måske lidt honning har du en perfekt servering til fx brunchbordet eller frokosten.
Jeg elsker pandekager. Ja, hvem gør ikke det? Og jeg har en særlig kærlighed til amerikanske pandekager, lavet med kærnemælk og dejligt tykke og luftige i konsistensen. Det kan dog være svært at lave den helt rigtige dej, men her i foråret publicerede den amerikanske medblogger Kaitlin Orr en fremragende opskrift på hendes og kæresten Anders Husas fælles blog. Den opskrift har jeg lavet nogle gange med stor succes, og jeg har med lige så stor succes modificeret opskriften, så den her blivet lavet med masser af fuldkornsmel.
Disse fuldkornspandekager kan du selvfølgelig sagtens servere med sirup, bacon og masser af smør, som amerikanerne ynder at gøre det. Men jeg har også med stort held sat den på bordet sammen med en syrlig gedeost, lidt brombær fra min have og en god tørret skinke, fx parmaskinke eller seranoskinke (som jeg desværre glemte at få på, da jeg tog billedet til opskriften).
Opskrift: Sådan laver du amerikanske fuldkornspandekager med brombær, gedeost og skinke
Til 4 personer
Fuldkornspandekager
250 g fuldkornsmel (eller en blanding af almindelig hvedemel og fuldkornsmel)
2 tsk bagepulver
2 tsk natron
1,5 tsk salt
4,5 dl kærnemælk
2 æg
50 g smeltet smør
Ekstra smør til pandekagebagning
1. Bland mel, bagepulver, natron og salt godt sammen.
2. Tilsæt kærnemælk, æg og smeltet smør og pisk til en ensartet dej.
3. Varm en pande rigtigt godt og smelt en god klat smør herpå. Kom ca. 1 dl dej på panden og bag pandekagen på den ene side, til den bobler godt og fuldkornspandekagen næsten er helt bagt igennem. Vend pandekagen og bag videre et øjeblik på den anden
4. Læg fuldkornspandekagen på en tallerken, sæt den evt. ovnen på 100 grader for at holde den varm. Bag resten af pandekagerne på samme måde.
Topping til fuldkornspandekager
Syrlig, blød gedeost
Et par håndfulde friske brombær (eller andre bær, fx hindbær)
8-12 skiver tørret skinke, fx parmaskinke eller serano
Lidt frisk rosmarin
Flydende honning, fx akaciehonning
1. Top en pandekage med skiver eller klatter af gedeost sammen med en lille håndfuld brombær, et par skiver god skinke (evt. revet i mindre stykker) og evt. lidt frisk rosmarin.
2. Dryp med lidt flydende honning.
